Frozen White Chocolate Boonanas
- 1 medium banana
- 8 ounces melted raw cacao butter
- ¾ cup raw cashew butter or tahini butter
- 5 tablespoons raw honey or grade B maple syrup
- 1 teaspoon raw vanilla powder
- Pinch Himalayan salt
- 8 cacao nibs
- 4 popsicle sticks. I like to use the thin wooden coffee stir sticks also known as cake pop sticks.
Cut the banana in half and then down the center lengthwise. You will have 4 pieces with a roundish ghost head.
Insert a popsicle sticks into the flat end of each banana ghost. Place bananas on a plate or small cookie sheet lined with unbleached parchment paper and freeze for 1 hour.
When the bananas are all frozen, make the white chocolate. Make sure everything you use when dealing with cacao butter is completely dry. Any moisture will cause it to not turn out. Melt the cacao butter over very low heat – be careful not to burn it. Add the melted cacao butter, cashew butter, sweetener, vanilla and salt to the Nutribullet or blend with an immersion blender until smooth.
Pour the white chocolate into a tall glass.
Dip each banana into the glass of white chocolate. Let the excess down off the top. Place back on your parchment paper lined plate or cookie sheet. Quickly press the cacao nibs into the banana ghost to make eyes. Put back into the freezer and take out when ready to eat your boonana pops.
