Pumpkin Pie Vodka – Not technically “healthy” but a lot of fun!
- 1 canned pumpkin pie filling
- 1 teaspoons pumpkin pie spice
- 1 pint of Whipped Cream flavored vodka
- 1 can of coconut cream.
- 1 teaspoon vanilla
- Touch of Grade B maple syrup
Add the entire pumpkin pie filling to a blender along with the pumpkin pie spice and the 1 pint of vodka. Blend the mixture until smooth.
After the mixture is completely blended pour the mixture through a nut bag and pour into mason jars, seal and refrigerate.
Add some coconut whipped cream to the top of each after dinner drink and sprinkle with cinnamon.
Coconut whipped cream instructions
1 can of coconut cream. Refrigerate can 1 hour so the cream hardens a bit at the top of the can. Scoop off the cream top and add to a bowl to mix.
Whip 3-5 until light and fluffy. Add 1 teaspoon vanilla and a touch of Grade B maple syrup and mix with immersion blender until well blended.
It can be refrigerated for 3 weeks.
