Spicy Sweet Roasted Chickpeas
- 1 can (15oz) chickpeas
- 1 Tablespoon lightly melted coconut oil
- 2 teaspoons pumpkin pie spice
- 1/8 teaspoon cinnamon
- 1/8 teaspoon vanilla bean powder
- 2 Tablespoons Grade B Maple syrup
Drain the chickpeas and dry them on a paper towel. Drying is super-important so don’t ignore this step!! They won’t turn out correctly if the chickpeas are not thoroughly dried.
Mix coconut oil, pumpkin pie spice, cinnamon, and vanilla paste in a bowl, and coat the chickpeas evenly.
Line a large glass baking dish with parchment paper, and bake for 20 minutes on 400 degrees.
Remove from the oven and drizzle maple syrup over the chickpeas and shake the chickpeas around until they are evenly coated. Be careful not to burn yourself on the hot baking dish.
Spread evenly in the dish and into the oven they go again. Bake for another 15-25 minutes and let cool.
